Cheddar Chive Scones

These cheddar and chive scones are made extra flaky and soft with Janie's Mill Silky Smooth Pastry flour. This classic, buttery scone recipe was generously shared by Katrina Heche, the voice behind Heche's Homestead (@heches_homestead) in Stoughton, Wisconsin.

Ingredients

  • 2 cups (240 g) Janie's Mill Silky Smooth Pastry Flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup (1 stick, 113 g) cold, cubed butter
  • 1 cup (113 g) shredded cheddar
  • 1/4 cup finely chopped chives
  • 3/4 cup heavy cream, chilled
  • 1 egg

Instructions

  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking powder, salt, and garlic powder. 
  3. Cut in butter until mixture resembles coarse crumbs. 
  4. Add cheddar and chives. 
  5. In a small bowl, whisk cream and egg. 
  6. Add wet ingredients to dry and mix gently until dough forms. 
  7. Pat into a 1-inch thick circle and cut into 8 wedges. 
  8. Place on a baking sheet and bake 18-22 minutes until golden. 

Tip: Refrigerate the scones for 30 minutes before baking for less spreading and more defined edges.
