    Heirloom Turkey Red Wheat has excellent flavor, and good protein quantity and quality. It was grown in the breadbaskets of Europe for centuries, prized for its hardiness, rich flavors, and excellent baking qualities. Turkey Red Wheat first came to the Great Plains with Mennonite immigrants from Crimea and the Ukraine in 1873, and has been recognized by Slow Food and put on their Ark of Taste. Bread bakers love to blend our organic Turkey Red Flour with High Protein bread flour for a richer taste. Turkey Red may also be substituted for All-Purpose flour in cookies, muffins, crackers, and quick breads.

    NEW LOT: As of January 2025, we are using a new lot of Turkey Red Wheat. This wheat has a protein level of 9.6%, which is lower than the previous lot, but the falling number remains good, at 415. Even though the protein is of high quality, the lower quantity means that it's best to combine with our High-Protein or Whole-Kernel Bread Flour for airy sourdough and yeast breads. You may also use it as a substitute for All-Purpose Flour in many baked goods from quick breads, to biscuits, to cookies.

Good

I used google and gather whole wheat flour before this, it felt like it had more fiber than this mill, but obviously this mill's flour is more fresh and more nutritious. I make chapatis with this turkey red flour from this mill. They taste good but they are hard. I need to figure out a way to make them softer. I will definately be buying from them again, i hope i get free shipping... this has more nutrition than store bought flour/

I baked a sourdough using 400 gms High Protein and 100 gms Turkey Red. The dough rose perfectly and the loaf is so flavorful. Amazing. I'll buy a bigger bag next time.

Back to Basics

I first used this flour a while back in an 80-20 mix with high-protien bread flour and, having tried a number of other flours since then, including a French rouge de Bordeaux, I'm getting back to basics with Turkey Red because it gives me wonderful chewy crust and a nutty, satisfying crumb. It's good flour -- really good flour.

Dense sourdough is

We made sourdough out of it but it was dense and didn’t rise much , my wife has been making sourdough for over a year , what would suggest to try to lighten it up
