Fantastic flour for bread baking

I make heavy, European style, sourdough bread using a bread machine and I am always experimenting with flours to improve the texture and crumb, the falvors. This high protein flour is like no other I have tried. My current favorite is to make whole grain rye bread with a high amount of mix ins like Quinoa and cracked rye (Janie's has the best!). This flour adds some true magic to make wonderful bread despite this being a very heavy dough for a bread machine. Just adding a little gives the dough elasticity which contributes to a wonderful texture for the final loaf. I just found Janie's and am pretty sure this will become my favorite flour source. Thank you Janie's for doing such a wonderful job, growing everything organically is hard word. It makes for such a better product though.
