    The term “white flour” is often used to mean “refined flour,” so “white whole wheat flour” sounds like a contradiction in terms . . . but it’s not! We stone-mill this flour from the WHOLE wheat berry of the WHITE wheat we grow, a variety called Frederick. This means you get a light color, but 100% of the nutrition found in the whole kernel.

    Our organic Frederick White wheat does not contain the strong-flavored phenolic compounds that give red wheat its color, so baked goods made with white wheat require less sugar or other sweeteners. This flour is very versatile—good in yeast breads (often combined with High Protein or Sifted Artisan flours), quick breads, cookies, pastries, biscuits, and crackers.

Jane Mill products

I have always enjoyed Jane Mill’s flour. I usually buy the white whole wheat flour and all purpose flour. I find them to be of good quality. I bought them locally when I lived in Illinois but since I’ve moved out of state I have them shipped. I’ll tell my daughter’s testimony. She said that there’s no bloating when using Jane Mill’s flour. She gets her shipped as well as she too moved out of Illinois. She uses more of a variety than I do. We just find the flours to be of high quality and we’ll keep using them until they prove otherwise. We have been using Jane Mills flours for several years now.

I used this for cookies, banana bread, and biscuits. It's almost akin to an all-purpose flour in my book. Looking forward to using it in a yeasted bread next.

Fredrick Flour Ordered by Mistake

Ugh. Read carefully when you order. I mistakenly ordered 25# of soft white wheat flour, instead of hard white flour (for making bread). I was disappointed but Janie’s Mill responded to my email quickly. This flour cannot be used to make bread but it is a beautiful all purpose flour. The order arrived on time and I wish that I had paid attention and purchased hard white flour from Janie’s Mill. Since this was my first order, I received FREE shipping which was so nice. I recommend purchasing Janie’s Mill flour despite my disappointment.

Delicious!

Strong whole wheat flavor so my husband didn't like it but my toddler son and I loved it! I made 2 loaves of bread, sliced and froze them. We eat a slice every morning with raw butter, sea salt, honey and cinnamon. Delicious!!! Very high quality taste and smooth texture, not grainy at all. Next time I will try to mix this flour with the pastry flour to see if I can compromise with hubby's taste buds.
