    Durum is an ancient wheat that is a close relative of Emmer. It is the “hardest” of the hard red spring wheats, and has a very high protein level and great flavor, whether you mill it into flour, or use our organic whole berries in grain bowls or breakfast bowls.

I use these berries (33%) to complement Janie's Mill's Glen berries (33%) (both freshly milled and bolted) and store bought roller mill high protein flour (34%) to prepare high hydration (>90%) pizza doughs ("alla romana"). It consistently delivers excellent results with an unbeatable complexity of flavor, superb oven spring, chewy dough and a perfect crust.
