Very good product

Excellent taste

One of my favorite flours for using in Sourdough bread. Excellent flavor and strong enough to deal with additions of seeds. I allow it to ferment all day and sometimes retard it overnight- two, at the most three folds, and the final bread has an even a light texture.

I've been trying to work with this flour for a month now and have concluded it is not for me. The bread made with the flour is dense.

Good flavor and consistency

I'm still learning to make good sourdough bread. I usually use 4-6 flours, with this one in the highest proportion. Janie's Mill flours help me have the confidence that I can have good tasting bread even though my skills are not quite there yet.
