  • Product Info

Heirloom Turkey Red Wheat has excellent flavor, and good protein quantity and quality. It was grown in the breadbaskets of Europe for centuries, prized for its hardiness, rich flavors, and excellent baking qualities. Turkey Red Wheat first came to the Great Plains with Mennonite immigrants from Crimea and the Ukraine in 1873, and has been recognized by Slow Food and put on their Ark of Taste. Bread bakers love to blend our organic Turkey Red Flour with High Protein bread flour for a richer taste. Turkey Red may also be substituted for All-Purpose flour in cookies, muffins, crackers, and quick breads.

NEW LOT: As of April 2024, we are using a new lot of Turkey Red Wheat. This wheat has a protein level of 10.2%, which is lower than the 13.7% of the previous lot, but the falling number remains good, at 400. Even though the protein is of high quality, the lower quantity means that it's best to combine with our High-Protein or Whole-Kernel Bread Flour for airy sourdough and yeast breads. You may also use it as a substitute for All-Purpose Flour in many baked goods from quick breads, to biscuits, to cookies.

Love this flour!

I typically make rye bread and often mix in Turkey Red along with the rye flour. I love this flour. It makes the dough really silky and easy to use. I notice its absence (would be trying something else) and always find myself going back to Turkey Red. It is my go-to wheat flour.

disappointed

I've been trying to work with this flour for a month now and have concluded it is not for me. The bread made with the flour is dense and no flavor.

I tried the Turkey Red in the zucchini bars I make each summer. It really elevated the flavor! Can't wait to try it in my other recipes
