    Our organic Sifted Durum adds a warm, rich flavor and aroma to your sweet and savory baked goods. This finely milled flour is sometimes called "extra fancy durum flour" or "semolina rimacinata" (twice-milled semolina). It's perfect for yeast and sourdough breads, as well as for finer-textured pasta, and rustic cookies or cakes. We mill this flour from Durum, an ancient grain closely related to Emmer. It's very high in protein, but has lower gluten potential than our High-Protein Flour.

    Sifted Durum is very versatile, and you can substitute it for about 30% of the bread flour you normally use in yeast or sourdough breads. It also adds a rich taste and golden color to cakes, cookies, biscuits, quick breads and more. Here are some great recipes we developed especially for our Sifted Durum:

High absorption rate - ideal for mixing with a lower protein flour like the dark rye. Nice color, excellent flavor. Recommend.

A learning experience with sifted durum flour

I tried the tartine recipe and bought the flour to learn and expand my knowledge of the difference kinds. In retrospect I erroneously thought the bread would be less dense...and while I loved working with the dough (it was soft and lovely and almost luxurious) and the loaves came out very nicely, I prefer a more open crumb. But the experimentation will go on. The bread does have a great flavor and toasts wonderfully.

Great flour, Many uses

Very high absorption rate - ideal for mixing with a lower protein flour like the dark rye, and still maintaining a higher hydration. Nice color, excellent flavor. Ideal for larger long-lasting naturally-leavened miches/boules - Recommend a portion of the mix to be AP or WW.
