    The term “white flour” is often used to mean “refined flour,” so “white whole wheat flour” sounds like a contradiction in terms . . . but it’s not! We stone-mill this flour from the WHOLE wheat berry of the WHITE wheat we grow, a variety called Frederick. This means you get a light color, but 100% of the nutrition found in the whole kernel.

    Our organic Frederick White wheat does not contain the strong-flavored phenolic compounds that give red wheat its color, so baked goods made with white wheat require less sugar or other sweeteners. This flour is very versatile—good in yeast breads (often combined with High Protein or Sifted Artisan flours), quick breads, cookies, pastries, biscuits, and crackers.

Bless Organic Farmers

I love the availability of stone ground grains. I have been baking bread for 40 years but recently learned about the benefits of gut healthy sourdough bread. What an education. Great first experience

First time using Janie’s Mill flours, and I graced the Thanksgiving table with a sweet potato pie, made with the white wheat flour crust . Dough was more dense than expected, but the crust was delicious – flaky, tasty, and for the first time I didn’t feel challenged by transferring the dough into the pie pan! Looking forward to using the other two flours from Janie’s I purchased; will keep you posted :-)

Jane Mill products

I have always enjoyed Jane Mill’s flour. I usually buy the white whole wheat flour and all purpose flour. I find them to be of good quality. I bought them locally when I lived in Illinois but since I’ve moved out of state I have them shipped. I’ll tell my daughter’s testimony. She said that there’s no bloating when using Jane Mill’s flour. She gets her shipped as well as she too moved out of Illinois. She uses more of a variety than I do. We just find the flours to be of high quality and we’ll keep using them until they prove otherwise. We have been using Jane Mills flours for several years now.
